Founders Denise Jantz and Kathleen Heinle chose the potato as their staple product because the vegetable stores well without refrigeration—a critical factor for remote areas. The name was inspired by Tom Robbins' book "Another Roadside Attraction".

Over the years, the business grew and evolved. In 2007, the company was acquired by the current owners—Rebecca Bard and Ian Gyori. Ian, with 30 years of experience as a chef, took over the kitchen, while Rebecca handled management. It was under their leadership that the brand became recognizable far beyond its original location.

In April 2014, the project expanded: a second branch, The Roadside Potatohead Too, opened in the town of Valdez. Located right on the shores of the bay, the restaurant quickly became a popular spot, combining the spirit of the original food truck with the full service of a modern dining establishment.
