The story of this iconic establishment began in 1975, when Jean-Pierre and Colette Lallement opened their first restaurant in the small village of Châlons-sur-Vesle. Thanks to the founders' talent, the venue quickly gained popularity and became a magnet for true connoisseurs of fine dining.

In the mid-1980s, the family decided to expand and moved to Tinqueux, choosing the majestic Château de la Muire mansion for their business. It was here that the restaurant transformed into a full-scale hotel complex. In 1996, the founders' son, Arnaud Lallement, joined the family business after apprenticing with legendary French chefs.

A turning point in the history of L'Assiette Champenoise came in 2002 when Arnaud took full charge of the kitchen. Under his leadership, the restaurant saw a meteoric rise: it received its second Michelin star in 2005 and was awarded the highest honor of three Michelin stars in 2014. A major renovation in 2009–2010 gave the interiors a contemporary look with subtle Japanese accents.

Today, the establishment remains true to its family traditions: Arnaud manages it alongside his wife Magali and his sister Mélanie. In 2025, L’Assiette Champenoise will celebrate its 50th anniversary, remaining one of the most prestigious gastronomic addresses in the entire region.
