The history of this site dates back to 1822, when the restaurant's current grounds were part of the vast San Juan finca. At that time, the estate belonged to the Dominican monastic order. However, in 1826, following the decrees of Marshal Sucre, the monks were forced to leave these lands, leaving behind a magnificent architectural foundation.

In the second half of the 19th century, the estate was acquired by Don José Mario Pizarro. Along with the house, he inherited an old mill (molino), which subsequently gave its name to the entire surrounding neighborhood. Later, the manor became home to Frenchman Santiago Granchamp, who arrived in the region in 1930 to help the local Franciscan monastery develop and refine the art of winemaking.

Today, Casona del Molino is officially recognized as part of Tarija's cultural heritage. The restaurant carefully preserves its original foundation and the spirit of the past, serving as a living witness to many historical events in this high-altitude region.
