The restaurant's founder, Nikolai Castro, literally grew up in the hospitality industry, helping manage the famous Barbacoa for over a decade. After the sudden passing of his father, Robert Castro, Nikolai decided to bring their shared epicurean vision to life.

For this new project, he brought in his mother, the talented artist and restaurateur Martine Castro, as well as his uncle, Richard Fernand. This creative and professional alliance allowed for the creation of a place with a unique soul, where family values meet an innovative approach to cooking.

Interestingly, the restaurant became a logical continuation of the success of Coa De Jima, which opened earlier in downtown Boise. Today, Coa Del Mar is considered the pinnacle of the Castro family's craftsmanship, combining years of experience with a commitment to perfect product quality.
