The history of Stardust Cafe began on the most romantic day of the year — Valentine's Day 2005. It was founded by Elizabeth Destiny and her daughter, Sparrow Huffman. The cafe's name was a touching gesture of respect to Gwen Clingman, a local Greenbrier County legend who previously owned the building and was known for her dedication to the community.

Before the cafe opened, Clingman's Market operated here for nearly sixty years (from 1945 to 2002). Notably, the building has maintained its status as a "woman-owned business" for over 82 years, which is a unique case for historic Lewisburg. In 2022, management passed to new owners, Savannah Webb and Dan Perry, who carefully preserve the legacy of this place.

The establishment also went down in regional history as one of the pioneers of the farm-to-table concept in West Virginia. Even before the use of local products became a mainstream trend, Stardust Cafe was already actively collaborating with local producers, laying the foundations for a responsible and high-quality approach to culinary arts in the county.
