Moving from Southern California to the quiet town of Three Rivers at the height of the pandemic, they launched a small food truck on the side of the highway. Despite natural challenges, including a major flood in 2022, the project not only survived but became the true heart of the local community.

The success of their street food inspired the owners to undertake a major expansion. In 2025, they purchased the building of the former We Three Bakery and completely transformed it. The establishment's area nearly doubled, turning the modest food stand into a full-fledged restaurant of over 2,500 square feet, designed with a love for Greek traditions and handcrafted details.

The grand opening of the renovated Tony's Taverna took place in October 2025 and was a landmark event for the entire region. More than 300 guests, including local government representatives, gathered for the ribbon-cutting ceremony. This project has not only enriched the city's cultural life but also created about 50 new jobs, putting Three Rivers firmly on the gastronomic map of the USA.
