The history of Île Sauvage Brewing Co. began in 2019 when three friends—Ian Ibbotson, Stephane Turcotte, and Adam Greasley-Jones—decided to bring their passion for unusual beer to life. The idea was born several years earlier when Ian first tried a Belgian ale and was struck by its complex flavor. Stephane, who became the head brewer, already had impressive experience by then: he had brewed beer in South Korea and even owned his own bar there before homesickness brought him back to Canada.

The path to opening the tasting room was not easy—the friends spent two years planning and navigating the bureaucratic hurdles of rezoning the Victoria property. The name "Île Sauvage", which is French for "Wild Island," was chosen deliberately: it highlights both the wild nature of Vancouver Island and the use of "wild" fermentation processes involving Lactobacillus bacteria and Brettanomyces yeast.

Over the years, the team has brewed more than 340 unique varieties, becoming true pioneers of sour ale production in Western Canada. Today, the brewery is known for its experimental approach, using red wine barrels for aging and constantly collaborating with local farmers and entrepreneurs to create drinks with a truly local character.
