The name of the new project is a tribute to Tom's grandfather, while its unique visual style became the realization of Natalie's dream.

The opening process of Bayberry Garden faced significant challenges due to the global pandemic, which led to delays. However, in 2021, the project finally opened its doors, becoming a symbol of the neighborhood's recovery and development. Over time, the owners decided to focus entirely on developing the garden restaurant, handing over their first business to other managers.

The establishment's team was strengthened by professionals from major culinary capitals. Executive Chef Mike Seeley brought his experience from Boston, while the bar program was curated by Ariel Brodsky, who previously worked at prestigious venues in New York. Today, the restaurant continues to "grow" along with its plants, offering guests an evolving experience where nature and cuisine are inextricably linked.
