A university graduate specializing in fermentation and distillation, Amy poured her passion for Spanish culture and art into this space, transforming it from a standard bar into a true cultural hub.

Its innovative approach did not go unnoticed: in 2016, the project was named Scotland’s Innovative Business of the Year, confirming the success of combining gastronomy and creativity.
