The history of this location began with the restoration of a derelict early 20th-century building. In September 2018, brothers David and Paul Reinert, already well-known in the city for their successful projects, acquired the space with the goal of turning it into something special. The restoration was extensive: builders had to literally revive the facade and reinforce the building's structure while preserving its historic spirit.

The interior design was developed in close collaboration with architects and designer David Dodd. One of the primary goals was to avoid using modern "hollow" materials like drywall. Instead, the finish features authentic textures, sandblasted old beams, and solid wood panels. Even the basement had to be filled in to create a stable foundation for the modern open-air patio.

The restaurant officially opened its doors in late May, quickly transforming from an ambitious construction project into a favorite meeting spot for West Side residents. Today, Gin Gin’s stands as an example of how respect for architectural heritage combined with a modern approach to hospitality creates a space that feels timeless.
